BAKED PENNE BOLOGNESE

INGREDIENTS:

2lbs. penne pasta, cooked

16oz ricotta cheese

1oz fresh basil
-
2oz Genoa salami, diced
-
1oz olive oil
-
2lbs. ground beef
-
1lb. Italian sausage
-
1 onion, diced
-
1 cup red wine
-
32oz tomato sauce
-
2 tbsp Colden's Freakin' Greek Rub
-
16oz mozzarella cheese
-
2oz parmesan cheese, shredded
INSTRUCTIONS:

Preheat Matador to medium heat.

Add the olive oil and salami and cook for 3-4 minutes until slightly crisp.

Add the ground beef and sausage, cook until done, and add excess grease if needed.

Add the onion, garlic, and Freakin' Greek Rub, then cook for 4-5 minutes until the onions are translucent.

Add the red wine and simmer until the wine is almost evaporated, then add the tomato sauce and reduce heat too low.

Allow to simmer for 8-10 minutes until the sauce is thick.

In large bowl, combine the noodles, ricotta, and basil, then mix well.

Assemble pasta and bake in the following order and cook at 350°F for 30 minutes until golden brown:

1/2 inch layer meat sauce

1/2 of the noodle mixture

1 cup mozzarella and 1oz parmesan cheese

1/2 inch layer of meat sauce
-
1 cup mozzarella and 1oz parmesan cheese
